Step 1 : 

You will need to purchase an Xbox One headset stereo adapter. 

Step 2 : 

After getting one, you connect it to the USB port at the bottom of the controller. 

The big advantage for this one over the previous method is that you can utilize the adapter for adjusting the ratio of the game’s volume of any microphone. This way, you can also adjust the overall volume of the headset too. You can also turn the microphone off in this method.

Do take note however that some headsets or headphones may or may not work as usual. I do suggest that headsets made by Microsoft are the ones that may work well on this particular device. 

There is also a THIRD way in which you can connect your Bluetooth headset to your XBOX one. 

The third and final method requires a separate purchase, which is a Bluetooth Adapter. 

What are Bluetooth Adapters anyway? These are often used for devices like car radios that do not have a Bluetooth module.

All you have to do now is to insert the 3.5mm jack plug onto the controller and attach the Bluetooth module in an appropriate manner.
